The Food Chain Gang: Christina Buschmann & Family, Christine Clancy, Mary Wasylenko
Dowd and Roger Cake Mixes: March 2002 by Christina Buschmann
Dutch Chocolate - My family thought the cake was delicious.  It takes a 9" round cake pan but I would suggest an 8" square.  It was good even without icing.  I froze some and have used it since and it holds up well and still tastes good when defrosted.  It was very easy to make.

Dark Vanilla - Instructions easy to follow.  Mild vanilla flavor and darker color than poundcake.  Has a tasty crust, texture of banana or poundcake.  It was nice and moist and an excellent alternative to a scratch cake.  Serving suggestions on box.

Lemon - Has a fresh yet light lemon taste.  The lemon flavor is incorporated into the flour mix.  What could be easier.  This also has a testy chewy crust, nice and moist.  A yummy easy to make cake.  Add a lemon glaze or a dusting of confectioners sugar or use as a base for a fruit tart.

Mona's Marvelous Mixes : March 2002
Sunny Bun Mix- I used 4" Hamburger Bun Rings.  The mix made 8.  They rose beautifully.  They reminded me of George's English Muffins - but not that high.  They tasted just great the first day.  The real test comes after that time.  We left some wrapped on the counter and refrigerated the rest.  The next day both tasted as if they were made fresh that day.  This was a delightful treat.  The third day the buns needed to be toasted and were great.  Untoasted on the third day, the bun crumbled.  By Mary Wasylenko

Pancake & WaffleMix-WE DO HAVE A WINNER!!  We used the waffle recipe.  It worked perfectly!! They cooked up fluffy & light, yet golden brown.  We ate them fresh.  We rate them a 5.  My family really liked these mixes-even the gluten eaters.  By Mary Wasylenko

Cinco Di Breggo Bread Mix - Casein Free Too. Prepare in oven or bread machine. This was easy to do and made up into a beautiful loaf of bread- moist with a lovely crust.  Has a nice texture but not as light as Bette's tapioca bread.  We do not like it toasted but as a sandwich bread.  Micheal said it was "real good".  We rate it a 4.  By Christina Buschmann

French Bread Mix - This was not much trouble to make, but I used the heavy-duty mixer as called for.  Without one, it might be difficult.  I got two very crusty loaves.  We tried them warm both with and without butter.  While I like the crispiness, I felt the bread was a little denser than normal french bread.  I did like it both warm with and w/o butter, but felt there was a slight aftertaste of something.  My husband agreed about the aftertaste.  I don't know if I would go to the trouble of making this too often, but perhaps once in awhile just to have crispy bread or to take out to dinner. No directions are given for using a bread machine.

My rating would be about 4.  By Christine Clancy

Miss Roben's Potato Bread Mix  - A surprising find March 2002  by Christine Clancy
Listed in Miss Roben's catalog as light, airy, good choice for rolls. #3101, $4.19 1lb.  This was very good and my family liked it and felt it was very close to regular potato bread.  This bread contains no rice flour.  I also liked it as soon as I put it in my mouth - soft nice bread texture.  Christine and I were quite delighted with it.  It tasted good and wasn't toasted.  Christine reports the directions were not very specific as to how long to mix the batter and felt she could have mixed it better.  Also perhaps "the temperature of the oven could have been lower as the outside got a nice crust but it needed more cooking on the inside although I tested it the way it tells you to"
On Ready Made Breads
Tested Glutino Corn Bread, Ener-G Six Flour and Seattle Brown Bread

None of the breads we liked right out of the package but microwave and they turned soft.  But, nobody was too keen on any of them until they were toasted.  Then they were accepted as enjoyable and rated good (on a scale from fair to excellent).  The favorite of all of us was the Seattle Brown Bread except the one non-celiac who liked the six flour loaf the best.  Also Christine's family made a grilled cheese sandwich out of the Glutino corn bread and rated it delicious.

A Special Note on Bread Mixes by Terry Masterson and Christina Buschmann
Both are experenced GF bread makers from scratch.  But, when they tested The Really Great Food Company's bread mixes they liked them so much that they have used them instead.  These mixes were reported on last year and are still one of the favorites.
